This banana bread is my go to recipe when I fancy something sweet or I have friends coming over. It is really quick and easy to make and always goes down really well ! I’ve made it as a gift to take to friends houses on play dates and also taken to friends who have just had babies ……  who doesn’t like cake ?! It is completely wheat and gluten free, so great for adults and kids with allergies, plus there is no refined sugar so its win win !

After many ‘ trial and error ‘ attempts I came up with this recipe because I wanted something I could make quickly mid – week that was ‘cakey’ if I fancied a treat ! It’s also great to grab when you are on the go for me and little one …. I hope you enjoy !

What you will need

2 bananas (ripe)

2 x eggs

1 teaspoon GF baking powder

½ cup of maple syrup

1 teaspoon vanilla paste

1 tablespoon cinnamon powder

½ cup of Almond Flour

1 cup Rice Flour or Gluten Free Flour

75g Organic butter (you can also use coconut oil)

Pinch of salt

Optional extras – 1 tablespoon of chia seeds or 1/2 cup of Blueberries !! (just add them in at the last minute and gently stir them in )

 

 

 

Method

Preheat the oven to 175. Add greaseproof paper to a standard loaf tin and grease with coconut oil

In a bowl mash the bananas. Add the eggs, GF baking powder, Maple syrup, vanilla paste, cinnamon powder and mix well with a whisk. Add the Almond flour and GF flour – Mix.

In a pan on a low heat gently melt the butter and then add to the mixture, add a pinch of salt, stir and pour into your tin.

Add to the oven for 20 – 35 minutes until golden brown on top and cooked through. (check by piercing with a knife – if it comes out clean it will be ready)

Once cooked leave to cool a little and then slice.

It tastes amazing with some butter spread on top and a cup of herbal tea !
