Polenta chips are a family favourite of ours. They make a really tasty alternative and are quick and simple to make. The good thing is that you can prepare them ahead of time and then just throw them in the frying pan to sauté when you want them! You can and them to an old favourite like ham, egg & chips OR serve them melted in butter & rosemary as a little something different with your steak!

What you will need

Good Quality Polenta (we use one like this https://www.amazon.co.uk/Organic-Polenta-Coarse- Yellow-Cornmeal/ )
Organic Butter/ Coconut Oil Salt / Pepper
Rosemary (optional)

Method:

Gradually pour 50g (per serving) into 250ml of boiling water.
Reduce the heat and stir continuously until it reaches the required thickness.
Add some butter and some seasoning and you can serve like this as an alternative to mash if you wish …. Read on to make the chips!

With butter or coconut oil grease the sides of a baking dish well. Pour in the polenta and smooth out. Set in the fridge to cool.
Once set the polenta should be firm and similar to a rubbery consistency! Remove from the fridge and whilst in its dish cut into chips/ cubes etc.
In a frying pan melt some butter or coconut oil, once hot add the chips. Sauté until golden brown all over. I like to sprinkle a good quality rock salt and a couple of sprigs of rosemary from the garden!
